## Huevos rancheros savoury Dutch baby

I love huevos rancheros. And as much as I love tortilla, I think there's room for something different.

So I swapped the base. A Dutch baby is just a thin batter poured into a screaming hot buttered pan. It puffs up in the oven, sets crisp at the edges and stays soft in the middle. With Jack cheese, garlic and coriander baked into the top, it’s sturdy enough to carry everything huevos rancheros piles on.

It looks like a lot of components, but the beans and the pico come together while the batter rests and the oven heats. By the time the pans are hot, everything else is ready to go.

### Before the oven goes on

- **Pans:** I use two 15cm (6in) ovenproof frying pans, one per person. Small cast iron pans are ideal because they hold heat well, which is what makes the batter climb.
- **Room temperature:** Get the eggs and milk out of the fridge early if you can. Cold batter rises less, which is why it rests while the oven heats.
- **The door:** Keep it shut for the full 15 minutes. A blast of cool air and the Dutch babies won’t rise as high.
- **Cheese:** Monterey Jack melts beautifully and is in most big supermarkets. A mild cheddar is a fine swap.
- **Timing:** A Dutch baby starts sinking a few minutes after it leaves the oven. Have the beans warm, the pico made and the eggs frying before you take them out.

**Serves** 2 | Prep 15 mins | Cook 30 mins | Total 45 mins

### Ingredients

**For the Dutch babies**

- 2 large eggs
- 60g (½ cup) plain flour (all-purpose flour)
- 120ml (½ cup) milk
- ¼ tsp salt, plus a pinch
- 1g (a few sprigs) fresh coriander (cilantro), finely chopped
- 1 garlic clove, minced
- 50g (½ cup) Monterey Jack cheese, grated
- 20g (1½ tbsp) butter

**For the refried beans**

- 2 tsp olive oil
- ½ medium onion, finely diced
- ¼ tsp sea salt, plus extra to taste
- 1 tsp ground cumin
- 400g (14oz) tin black beans, drained and rinsed
- 70ml (2½fl oz) vegetable stock or water
- ½ tsp lime juice
- Freshly ground black pepper, to taste

**For the pico de gallo**

- 2 ripe tomatoes
- 1 banana shallot, finely diced
- 5g (a small handful) fresh coriander, finely chopped
- 1 tbsp lime juice
- ¼ tsp salt

**To serve**

- 1 tsp sunflower or olive oil, for frying
- 2 large eggs
- 20g (¼ cup) Monterey Jack cheese, grated
- 1 ripe avocado, sliced (optional)
- Hot sauce (optional)
- Freshly ground black pepper

### Method

**Step 1: Make the batter**

1. Preheat the oven to 230°C (210°C fan) / 450°F / gas mark 8.
2. Put the eggs, flour, milk and ¼ tsp salt in a stick blender jug. Blend until smooth and frothy.
3. Leave the batter to stand at room temperature while the oven heats, about 20 minutes.

**Step 2: Make the refried beans**

1. Heat the olive oil in a small saucepan over a medium heat.
2. Add the onion and sea salt and fry for 3 minutes, until soft and translucent.
3. Stir in the cumin and cook for 30 seconds, until fragrant.
4. Add the beans and the stock or water. Cover and simmer for 5 minutes.
5. Mash the beans roughly, leaving some texture.
6. Cook uncovered for 3-4 minutes, stirring, until thick enough to hold its shape on a spoon.
7. Take off the heat, stir in the lime juice and season with salt and pepper. Cover to keep warm.

**Step 3: Make the pico de gallo**

1. Halve the tomatoes, scoop out the seeds and dice the flesh small. Put it in a bowl.
2. Add the shallot, the 5g coriander, the lime juice and salt. Stir and set aside.

**Step 4: Bake the Dutch babies**

1. Put two 15cm (6in) ovenproof frying pans in the oven to heat for 10 minutes.
2. Meanwhile, mix the 50g cheese, the garlic and the 1g coriander in a small bowl with a pinch of salt.
3. Take the hot pans out and add 10g butter to each. Let it bubble and melt completely.
4. Pour half the batter into each pan.
5. Scatter half the cheese mixture over each.
6. Return to the oven for 15 minutes, until puffed, deep golden and crisp at the edges. Don’t open the oven door while they bake.

**Step 5: Fry the eggs and finish**

1. About 5 minutes before the Dutch babies are ready, heat the oil for frying in a frying pan over a medium heat.
2. Fry the eggs for 3-4 minutes, until the whites are set and the yolks still runny.
3. Spoon a generous amount of refried beans into the middle of each Dutch baby.
4. Top each with half the 20g cheese, a fried egg and a few spoonfuls of pico de gallo.
5. Add avocado and hot sauce, if using. Finish with black pepper and serve straight away.

**Notes**

- **Leftover beans:** A full tin makes roughly twice what you need. The rest keeps in the fridge for up to 3 days, or the freezer for up to 3 months. Reheat with a splash of water.
- **Pico:** Best eaten within a few hours; the tomatoes go watery overnight.

### Why it works

Huevos rancheros has always been about contrast: rich beans, a runny yolk, something sharp and fresh to cut through it. All the Dutch baby does is give that a different foundation.
